Healthy Banana Bread Muffins

I am huge fan of Banana Bread… but the Southern, one pound of butter, one pound of sugar kind. However, these muffins, slightly adapted from COOKIE + Kate, with their healthy replacements were a wonderful surprise.
After reading the book Fiber Fueled, I am on a mission to try and heal my gut by introducing more fiber into every meal through whole foods. I, for so long, thought I was doing the right things by upping my Fiber intake with the white, tasteless powder that you can pour in your coffee every morning. I was wrong.
Did you know 3% of Americans get their daily minimum intake of Fiber? 3%!
Bananas and Rolled Oats are a great source of fiber, may aid in weight loss, improve blood sugar, and may help you feel full longer. If I can help you get these health benefits with some delicious muffins with coffee in the morning….well that makes me happy.

Ingredients:
· ⅓ cup melted coconut oil
· ½ cup of honey
· 2 eggs
· 1 cup packed mashed ripe bananas (about 3bananas)
· ¼ cup milk of choice or water (I used 2% but almond or Oat milk would work great)
· 1 teaspoon baking soda
· 1 teaspoon vanilla extract
· ½ teaspoon salt
· ½ teaspoon cinnamon, plus more for sprinkling on top
· 1 ¾ cups of flour – you can substitute for whole wheat flour
· ⅓ cup old-fashioned oats for an extra boost of fiber
· 1 teaspoon Turbinado (raw) sugar for sprinkling on top
Instructions:
1. Pre-heat oven to 325 degrees
2. Melt coconut oil and pour into mixing bowl with honey, stirring together with a whisk or fork. Once combined, mix in the 2 eggs
3. Mash bananas and mix into oil/honey/egg mixture, adding baking soda, vanilla extract, salt, and cinnamon
4. Pour in flour and oats and stir until combined
5. (Optional) If you’d like to add in chocolate chips, or nuts to your muffins, add in now
6. Fill muffin cups 2/3 of the way full. Sprinkle a few rolled oats/ sugar on top
7. Bake for 25 minutes
8. Allow the muffins to cool before eating
